Crispy tortilla chips are smothered in zesty salsa roja and topped with Merkts Sharp Cheddar for a creamy, tangy finish. Topped with perfectly fried eggs, creamy avocado slices, heavy cream, and a sprinkle of fresh cilantro, this dish is a hearty and satisfying breakfast or brunch option with layers of textures and vibrant flavors. It’s a comforting classic, elevated with Merkts cheese for an extra cheesy touch!
- yield: 4 servings
- serving Size: 1 egg + tortillas
- cook Time: 40 minutes
How to Make It
- Fry the tortillas: Heat 1/4 cup of oil in a large skillet over medium-high heat until it shimmers. Add about a quarter of the tortilla wedges and cook, flipping once, until they are lightly brown and crisp.
- Drain the tortilla chips: Place the freshly fried tortilla chips on a paper towel-lined baking sheet to drain. Lightly sprinkle with salt. Repeat this process until all tortillas are fried, adding more oil if needed.
- Prepare the salsa roja: In a blender, combine the tomatoes, onion, jalapeño, and garlic. Pour in 1 cup of broth and blend until smooth.
- Cook the salsa: Heat 1 tablespoon of oil in a large skillet over medium-high heat until it shimmers. Add the salsa and cook, stirring occasionally, until slightly thickened, for 5 to 10 minutes. Add additional broth to thin out the salsa, if needed. Taste and season with salt as needed.
- Coat the chips with the salsa: Add the tortilla chips and stir carefully to coat them with the salsa. Cook until the tortillas are heated through, about 3 minutes. Taste and season with salt as needed.
- Add the fried eggs and garnish with slices of avocado, heavy cream, melted Merkts, and cilantro on top. Serve warm, still in the pan.
- Add a Protein: Serve with shredded chicken, carnitas, or chorizo to turn the chilaquiles into a heartier meal, perfect for lunch or dinner.
- Top with a drizzle of Mexican crema or sour cream to add a cool, creamy contrast to the zesty salsa roja and sharp cheddar.
- Add a few slices of crispy bacon or sausage on the side to complement the cheesy, savory richness of the dish.
- Pair with a side of black beans or refried beans to complement the rich flavors, or a simple corn salad or elote for extra flavor and texture.
- Serve with lime wedges for a fresh squeeze of citrus over the top to brighten the flavors and balance the richness of the eggs and cheese.
- Serve with extra tortilla chips on the side for those who want a crunchier bite with the saucy chilaquiles.
